For the Chicken
Ingredients:
- 2 boneless chicken breasts or thighs (skin-on optional)
- Firecracker Farm Three Kings Hot Salt – for dry brining
- Olive oil or neutral oil – for roasting or air frying
Instructions:
- Dry Brine: Generously season the chicken with Firecracker Farm Hot Salt. Let it sit for 15–30 minutes at room temperature.
- Roast or Air Fry:
- Oven: Preheat to 400°F. Roast chicken on a baking tray for about 15–18 minutes until cooked through.
- Air Fryer: Cook at 400°F for 14–16 minutes depending on size, flipping halfway.
- Glaze it Up: Brush the glaze over the chicken before cooking and once again mid-cook for a caramelized finish.
For the Jerk-Style Glaze
Ingredients:
- 3 green onions
- 3 garlic cloves
- 2 tbsp brown sugar
- 3–4 sprigs fresh thyme
- 1 pinch nutmeg
- ½ Scotch bonnet pepper (optional, for heat)
- 2–3 whole allspice berries or ½ tsp ground allspice
- 1 tsp soy sauce
- 1 pinch Firecracker Farm Three Kings Hot Salt
Instructions:
- Blend: Add all ingredients to a blender or food processor. Blend until smooth. Use to glaze chicken during roasting.
To Serve
Slice and serve hot. Pairs perfectly with rice, grilled pineapple, or pickled slaw. Expect smoky sweetness, warm heat, and bold island vibes in every bite.
